RECIPE TIME! Stuffed Zucchini

A clean and easy recipe I love, one of my favorites! Full with vitamins, protein and healthy fats :)
For 4 persons you need:
- 4 zucchinis
- 1 piece of garlic
- 1 little onion
- 3 - 4 tomatoes
- 2 - 3 mushrooms
- 80g soy granula
- 1 tsp extra virgin olive oil (or another oil. Just healthy)
- some cheese or parmesan
Preparation:
Put the soy granula in a bowl and put hot water over it. It has to soak around 20min. Cave the zucchinis and put them aside. Chop the zucchini hearts and all other veggies in very little pieces and put them in another bowl. Mix everything through, put the oil in also.
Now fill the veggies in the caved zucchinis and grate the cheese over it. Put the zucchinis in the oven and bake them around 15min at 190°C.
Enjoy them hot or cold:)
